Layered Pasta Ricotta Pie

List of Ingredients
1/4 lb.vermicelli
1 T. olive or vegtable oil
1/3 c. finely chopped onion
4 cloves of garlic,minced
1 c. grated Romano cheese
3 eggs,divided
15 oz ricotta cheese
1 pkg.thawed and drained chopped 26 oz. jar spaghetti sauce

Recipe
Break vermicelli into thirds and cook,& drain.Saute onion and garlic in oil until tender. Mix with vermicelli,1/2 c. Romanoand 1 egg.Press into bottom of well greased 9" springform pan.Mix 2 egg yolks,ricotta,spinach,&1/2 c. romano.Spread over pasta layer. Beat 2 egg whites till stiff,fold in 1 1/2 c. pasta sauce.Pour on top and bake at 350 50-60 min. till set,let stand at least 10 min. before cutting .Garnish with heated leftover sauce and parsley sprigs. Serves 6-8
