Penne al Fresco
Penne pasta, cooked
1 oz Extra Virgin olive oil
3 ea Whole garlic cloves, crushed
12 oz Whole peeled tomatoes, boiled
3 springs Fresh basil
Pinch of crushed red pepper
Salt and Pepper to taste
3 oz Parmesan Reggiano, grated
Recipe
In a preheated sauté pan add the olive oil and garlic, cook until garlic is brown,
not black. Add the tomatoes, basil and red pepper flakes, turn down heat and simmer
for 3-5 minutes stirring occasionally. Add the Parmesan Reggiano. In a separate
pot bring 4 cups of water to a boil to quickly reheat pasta. Drain and toss sauce
with pasta. Garnish with more cheese and fresh sprig of basil.
