TexiMexi Lasagna from Penny
3 tsp oil of choice (I use olive)
1 C chopped onion
1 to 1 1/2 lbs. ground turkey or beef (I use turkey)
3-4 cloves minced garlic (or less if you prefer)
1 can (12-15 oz) beans, drained (I use kidney)
1 can (12-15 oz) diced tomatoes, drained (I use no-salt added)
1 8oz. container sour cream (I use light)
1 1/2 C shredded cheese (I use colby jack)
4-6 eight or ten inch flour tortillas
6 tsp chili powder
3 tsp cumin powder
1/2 tsp oregano (dried)
1/4-1/2 tsp seasoned salt (depending on your salt preferences)
1/4 tsp curry powder
1/4 tsp black pepper
Recipe
Mix together spices (last 6 ingredients) in small dish. In large
skillet, heat oil on medium high. Add onion and sauté 3 minutes. Add
meat and garlic and half of spice mixture. Brown meat, breaking into
small bits. Drain. Add beans and tomatoes and rest of spice mixture.
Heat through. Turn off heat and add sour cream. Mix thoroughly.
Spray 8"x8" square pan or 9" round (3 inch deep) pan with cooking spray.
Place one tortilla in bottom. Spoon some meat mixture over and cover
with cheese. Repeat ending with a tortilla on top. Press down gently to
ease out air bubbles. Cover with foil and bake 35-45 minutes at 375.
Remove foil, sprinkle with cheese and bake 10 minutes more. Let rest 10
minutes before serving. Makes 4 huge servings or 6 regular ones. Top
with your favorite taco toppings like lettuce or salsa.
