Tortellini with Tomato-Basil Sauce

Yield: 4 servings.
2 tea. olive oil
1 large chopped onion
14 1/2 ounce can chopped tomatoes, with juice
Salt and freshly ground black pepper
12 oz. froze cheese tortellini
1/4 cup chopped fresh basil
1/4 cup freshly grated Parmesan cheese
Recipe
1. In a large nonstick skillet coated with cooking spray, heat oil over
medium heat. Add onion and cook 10 minutes or until well-browned; stir
often. Add tomatoes with juice and bring to a boil.
2. Reduce heat to medium low and simmer, stirring occasionally, for 5 to 10
minutes or until sauce is slightly thickened. Season with salt and pepper
to
taste.
3. Meanwhile, cook tortellini according to directions, but without using
oil
or salt; drain. Spoon into large serving bowl; pour tomato sauce over; add
basil. Toss to coat, top with cheese and serve immediately.
