Chocolate Zucchini Brownies
Mix:
2 - 2 1/2 cups grated zucchini
1/2 cup ripe mushed banana
1 T water
1 egg
2 tsp vanilla
Mix separately:
2 cups flour (I use 1 cup whole wheat, 1 cup unbleached white)
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup cocoa powder
2/3 cup sugar (more if you like it sweeter)
1 cup chopped pecans (nuts are added to dry mixture to coat them so they will not sink to bottom during baking)
1 cup good quality chocolate chips
Recipe
Fold dry ingredients into wet, batter will be stiff. While putting batter into pan, sprinkle on chocolate chips and with the back of a spoon or spatula press chocolate chips slightly into batter. Bake in nonstick oblong brownie pan (7x13 or so) at 325º, 25-30 minutes till toothpick comes out. Cool. Sprinkle top with confectioners sugar. Cut into squares and serve.
