Cracker Jacks
6 quarts popcorn -- unsalted
1 cup low-fat margarine
2 cups brown sugar -- packed
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
Recipe
Have the popcorn popped and placed in a large pan (I use an old fashioned dish pan).
Bring to a full rolling boil margarine, sugar, corn syrup and salt and boil for 5 minutes, stirring constantly. Remove from heat and immediately add soda and vanilla, stirring to make the mixture foam. Pour coating on popcorn corn and stir to coat. Divide corn between 2 greased 9" x 13" pans or a large greased turkey roaster. Bake in 250º F. oven for 1 hour, stirring every 15 minutes getting the syrup from the bottom of the pans back to the popcorn. Pour out on counter and let cool. Break apart and store in air-tight container.
NOTE: Nuts can be added to the popcorn before adding the coating. This makes it more like Cracker Jacks.
