Potato Salad
This potato salad is a favorite in my family and in their families, as well. When the potatoes are grated, the salad can be a wonderful chip dip as well. This potato salad chilled and garnished with eggs, cilantro or sweet basil will be a beautiful addition to your table. It has a rich taste. Add more buttermilk and you have a creamy dip.
* 4 medium potatoes
* 3 hard boiled eggs
* 1 C. chopped celery
* 1 C. chopped onion
* 1 C. mayo
* 1/2 C. buttermilk
* 1 tsp. celery salt
* 1 tsp. onion powder
* 1 tsp. sweet basil
* paprika
* salt and pepper to taste
Directions
Boil potatoes in skins and cool. Chop 2 potatoes and grate other two. Add two boiled eggs, grated. In a separate, bowl mix together spices, mayo, and buttermilk. Add the potatoes and eggs, then chill and put on a platter and garnish with sliced eggs and paprika.
