North Carolina BBQ Ribs from David
4 teaspoons ground cumin
4 teaspoons ground coriander
1 tablespoon oregano
2 teaspoons salt, divided
2 teaspoons pepper, divided
4 pounds spareribs (baby backs work best)
1 cup cider vinegar
6 tablespoons brown sugar
2 tablespoons butter
2 tablespoons oil
1 teaspoon mustard powder
1/4 teaspoon cayenne pepper
Recipe
In small bowl, combine cumin, coriander, oregano, 1 teaspoon salt and 1
teaspoon pepper. Rub spice mixture on both sides of ribs. Cover; refrigerate
at least 4 hours or up to overnight.
Preheat oven to 375 degrees.
Wrap and seal each slab in heavy-duty aluminum foil. Place packets on baking sheets; bake 1 hour. Remove from oven; let stand 10 minutes. Make slit in foil to allow steam to escape. Remove foil and pour off any liquid.
In medium saucepan, combine vinegar, brown sugar, butter, oil, mustard
powder, cayenne, remaining salt and remaining pepper. Simmer over low heat, stirring until sugar has dissolved and butter has melted. Remove from heat.
Prepare grill or broiler. Brush ribs with vinegar mixture. Grill or broil
ribs, brushing 2 minutes with vinegar mixture, turning ribs as they brown, 5
minutes. Serve ribs with any remaining vinegar mixture.
Makes 4 servings.
