    Blue Cheese Popovers

    2 cups milk
    1 stick butter
    1/4 lb. crumbled blue cheese, plus 6 Tbsp.
    salt & pepper to taste
    pinch of sugar
    2 Tbsp. chopped garlic
    1 Tbsp. chopped fresh herbs
    1/2 lb. A.P. flour sifted with 2 tsp. baking soda
    6 extra large whole eggs

    Bring 1st seven ingredients to a boil in a heavy bottom saucepot. Add flour all at once and stir rapidly with a wooden spoon until dough comes together and pulls away from the sides of the pot.

    Pour dough into a mixer and mix on medium speed. Add eggs one at a time until dough appears shinny. Scoop dough into a greased muffin or popover tins and bake at 450 degrees for 15 minutes, then at 350 degrees for ½ hour or until popovers are firm and golden brown. Serve hot.
