Cranberry Nut Bread

3 cups Flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup sugar
3/4 cup shortening
2 eggs
1 cup orange juice
1/2 cup sour cream
2 cups coarsely chopped fresh cranberries
1 cup chopped nuts, optional
Recipe
Preheat oven to 350 F. Grease and flour two 8x8-inch loaf pans. Combine flour, soda, and salt; set aside. Using mixer, blend sugar and shortening until light and fluffy. Add eggs, orange juice, and sour cream, and mix until blended. Stir in flour mixture just until moistened. Fold in cranberries and nuts. Pour into prepared pans and bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove to wire rack to complete cooling. Wrap tightly. If desired freeze for up to two months
