Eastern Shore Spoonbread
1 cup white corn meal
2 cups boiling water
1/4 tsp. salt
2 Tblsp. butter
4 eggs, beaten
1 cup cold milk
Recipe
Bring water to a boil. Stir in corn meal. Cook 1 minute and remove from heat. Add butter and beat well. Add beaten eggs and beat again. Add milk. Pour into hot well buttered baking dish. Bake at 400 degrees for 25 minutes. Serve at once with butter.
