Flat Bread

3 cups Warm Water
2½ tsp. Yeast
½ tsp. Honey
2½ cups Wheat Flour
2½ cups AP Flour
1 TBSP. Kosher Salt
½ cup Olive oil
Procedure-
1. Combine water, yeast, and honey in bowl. Let sit for 10 minutes.
2. Sift flours and salt together.
3. Put flour mixture in Hobart Mixer.
4. Using dough hook, slowly add water mixture on slow speed.
5. Still on Slow, add olive oil.
6. Spray large mixing bowl with pan spray. Transfer dough to bowl.
7. Cover with plastic wrap and let rise for 30 minutes.
8. Scale dough into 5 oz balls and transfer to sheet tray.
