    Grilled Shrimp and Roasted Pear and Tomato Chutney Bruschetta

    YEILD 4 SERVINGS
    8 U\1O SHRIMP
    1 TBSP MINCED GARLIC
    EXTRA VIRGIN OLIVE OIL, AS NEEDED
    CIABATTA LOAF SLICED ¼ INCH
    SALT AND PEPPER AS NEEDED
    1 CUP DICED ROASTED TOMATOES
    1 CUP DICED ROASTED PEARS
    ½ CUP DICED ROASTED SWEET ONIONS
    1 TBSP SAMBAL
    2 CUPS MANGO CHUTNEY
    1 TSP CINNIMON
    1 CUP FRESH ARUGALA
    1 LEMON

    COAT BREAD SLICES IN OLIVE OIL AND BAKE UNTIL GOLDEN BROWN ON SHEET PAN. SAUTE CUT IN HALF SHRIMP IN GARLIC AND OLIVE OIL UNTIL JUST DONE AND SET ASIDE. IN A 4 QUART SAUCE POT SIMMER REMAINING INGREDIENTS FOR 15 MINUTES. TOSS OLIVE OIL, ARUGULA, AND LEMON JUICE WITH SALT AND PEPPER AND PLACE ON TOP OF CRUSTINI, SHRIMP AND CHUTNEY THEN SERVE.
