    Ham Spoon Bread

    2½ cups ham broth
    ½ cup yellow cornmeal
    3 eggs
    1 cup diced cooked ham
    2 tablespoons melted butter

    Recipe



    Bring broth to a boil and sift in cornmeal. Continue cooking for 5 minutes, stirring constantly. Remove from heat and add beaten egg yolks. Beat well. Fold in beaten egg whites. Spread diced ham in baking dish and dribble melted butter over it. Pour in cornmeal mixture and bake 1 hour at 325° F.
