    Healthy Corn Bread

    Makes:

    8 servings


    Ingredients:


    1 cup flour

    3/4 cup cornmeal

    1/3 cup sugar

    1 tablespoon baking powder

    1/2 teaspoon salt

    2 teaspoons caraway seeds

    3 egg whites or 3 tablespoons egg substitute

    1 cup skim milk

    2 tablespoons unsalted butter, melted and cooled slightly

    Directions:


    Coat an 8-inch square baking pan with nonstick cooking spray (nonfat).

    Stir together first 5 ingredients and half the caraway seeds in a bowl.

    Mix remaining ingredients in another bowl.

    Stir milk mixture into dry ingredients until mixed well.

    Spread batter into pan and sprinkle with remaining caraway seeds.

    Bake at 425 degrees F for 20 minutes in middle of oven.

    Cool in pan on a rack 5 minutes.
