Lemon Bread
Ingredients
1/2 cup butter
1 cup sugar
2 eggs, slightly beaten
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 cup chopped nuts
peel of 1 lemon, grated
Directions
Preheat oven to 350 degrees.
In a bowl, cream butter and sugar; add eggs and mix until combined. Sift flour,
baking powder and salt together. Alternately, add flour mixture and the milk to
butter mixture; stirring constantly. Add nuts and lemon peel and combine. Pour
into a greased loaf pan. Bake for 1 hour.
Glaze
Ingredients
1/4 cup sugar
juice from 1 lemon
Directions
Combine sugar and lemon juice. Poke holes in the top of bread and pour glaze
over.
Apple Bread
Great for older babies and everyone else!
Ingredients:
1/2 cup canola oil
1 cup sugar
1 tsp. vanilla
1 large egg
2 cups sifted unbleached flour
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking powder
2 Tbsp. milk
1/2 cup raisins
2 large apples finely chopped (use good baking apples)
1/2 cup walnuts chopped
Glaze:
1/2 cup powdered sugar, sifted
1 Tbsp. water
2 Tbsp. melted butter
Directions:
Combine oil, sugar, and vanilla. Cream until light and fluffy. Add eggs and beat
well. Sift together flour, cinnamon, salt, and baking powder. Add milk, raisins,
apples, nuts, and dry ingredients to mixture and stir only until flour is well
dampened.
Bake in well-greased 9x5x4 inch loaf pan at 350 degrees F for 50 to 60 minutes.
Cool; remove from pan. Combine glaze ingredients; mix well and pour over loaf.
Let glaze set before wrapping loaf tightly. Best if made day prior to serving.
You may substituted the following for the apples:
1 cup blueberries
1 1/2 cup fresh peaches, sliced thin
or 1 1/2 cup shredded carrots
Banana Bread
* 1/4 cup butter, softened
* 1 cup sugar
* 1 cup mashed fully ripe bananas
* 1 cup Sour Cream
* 2 eggs
* 2 1/4 cups flour
* 1 1/2 teaspoons Baking Powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup chopped WalnutsDirections
* Heat oven to 350°. Beat butter and sugar in large bowl with mixer until
well
blended. Add bananas, sour cream and eggs; mix well. Add combined dry
ingredients; mix just until moistened. Stir in nuts.
* Pour into greased and floured 9x5-inch loaf pan.
* Bake 1 hour or until toothpick inserted in center comes out clean. Cool 5
minutes; remove from pan to wire rack. Cool completely before slicing to serve.
Refrigerate leftovers.
Special Extra: Mix 2 tablespoons sugar and 1/4 teaspoon ground cinnamon. Dust
greased pan with 1/2 of the sugar mixture. (No need to flour the greased pan.)
Pour batter into pan, sprinkle with remaining sugar mixture and bake as
directed.
