    Marmalade Nut Bread

    flour, 2 1/2 cups
    sugar, 1/3 cup
    baking powder, 3 1/2 tsp.
    salt, 1 tsp.
    walnuts (coarsely chopped), 1 cup
    egg, 1
    orange marmalade, 1 cup
    orange juice, 1 cup
    vegetable oil, 3 tbsp.

    In a large mixing bowl, thoroughly stir together flour, sugar, baking powder and salt. Add walnuts and coat evenly. Set aside.

    In a medium bowl, mix together slightly beaten egg, marmalade, juice and vegetable oil. Add to flour mixture, stirring only until dry ingredients are moist.

    Divide batter evenly between two well-greased loaf pans. Bake at 350 degrees for approximately 1 hour or until done (use toothpick method).

    Remove from oven, cool for 10 minutes then turn out loaves onto cooling racks. When cool, wrap tightly in aluminum foil. Keep for one day before serving.
