Peanut Butter Bread
Yield: 1 (9-inch) loaf
Ingredients:
2 cups all-purpose flour
1 Tbsp. baking powder
1/2 tsp. salt
1/4 cup salted butter, softened to room temperature
1/2 cup sugar
1/4 cup firmly packed dark brown sugar
1 cup creamy peanut butter
1 large egg
1 tsp. pure vanilla extract
1 cup milk
Preheat oven to 350 degrees. Grease a 9-by-5-by-3-inch loaf pan
and set aside.
In a small bowl, combine flour, baking powder and salt. Set aside.
Cream butter and sugars until they are combined. Add peanut
butter and mix it in. Add egg and vanilla. Scrape down sides of bowl
and mix again. Add flour mixture. Blend until combined. Mixture will
be dry. Slowly pour in milk and mix well.
Spoon batter into prepared loaf pan. Bake for 50 minutes or until
the center springs back when pressed with a fingertip. Cool loaf for
10 minutes in the pan and then remove to a cooling rack to cool
completely.
