    Rhubarb Bread with Fruits and Nuts

    1-1/4 cups brown sugar
    1.3 cup white sugar
    3/4 cup canola oil
    1 egg
    2-1/2 to 2-3/4 cups unbleached flour
    1 cup milk
    1 tsp. vinegar
    1-1/4 tsp., baking soda
    3/4 tsp. salt
    1 tsp. cinnamon
    1-1/2 tsp. vanilla
    2-1/ cups chopped rhubarb--slice stalks through slicing disk of food processor or cut stalks into thin slices
    1 cup chopped peaches (make sure they are ripe or even overripe)
    1/2 cup chopped nuts (your choice)
    1/4 cup white sugar
    1/4 cup brown sugar
    2 tbsp. melted margarine

    Recipe



    Preheat the oven to 325 degrees. In a medium-sized bowl, mix the sugar, oil, vanilla and egg. Add the vinegar to the milk and add that to the bowl. Mix together well. Add the flour, baking soda, cinnamon and salt. Fold in the rhubarb, peaches and nuts, if desired. Pour into two greased standard bread pans.
    Mix the sugars and margarine together and sprinkle evenly over the two loaves. Bake for 1 hour.

    VARIATION: Instead of the peaches, add 1 cup of fruit of your choice, like raspberries, strawberries, or blueberries. Add apples or nectarines. Be creative and add more than one fruit, but no more than one cup total.
