    Sweet Potato Nut Bread

    1 c margarine
    2 2/3 c sugar
    4 eggs
    3 1/2 c all purpose flour
    2 tsp. baking soda
    2 c cold mashed sweet potatoes (or 1 pound, 7 oz can)
    1 tsp. each salt, nutmeg, and cinnamon
    2 / 3 c cold strong coffee
    1 c chopped nuts

    Preheat oven to 350 degrees. Cream margarine and sugar, add eggs, one at a time, mixing well after each addition. Blend in cold sweet potatoes.

    Sift together dry ingredients and stir into creamed mixture, alternatively with cold coffee. Add nuts. Pour batter (very thick) into 2 greased, floured 9x5x3" loaf pans, AND 8 greased muffin tins.
    I prefer to use 3 smaller 8 1/2 x 4 1/2 x 2 1/2 loaf pans, then bake 1 hour for bread and 25 minutes for muffins.
