Swiss Cheese Bread
4 cups flour
2 T. sugar
1 T. baking powder
1 1/2 t. salt
1/2 cup chilled butter or margarine, cut into pieces
4 cups shredded Swiss cheese (16 oz)
1 T. dried dill weed
2 cups milk
2 eggs
Preheat oven to 400. In a large bowl, combine flour, sugar, baking powder and salt. Using a pastry blender or 2 knives, cut in butter until mixture resembles coarse meal. Stir in cheese and dill weed. In a medium bowl, whisk together milk and eggs. Add milk mixture to flour mixture; stir just until moistened. Pour batter evenly into 7 greased 3 x 5 inch loaf pans. Bake 20 minutes or until a toothpick inserted in center of bread comes out clean. Cool 10 minute sin pans. Remove from pans and serve warm or cool completely on a wire rack.
Makes 7 mini loaves.
