Apple Cranberry Muffins
Makes 12 muffins
1 3/4 c. flour
1/4 c. sugar
2 1/2 t. baking powder
3/4 t. salt
1/2 t. cinnamon
1 egg, well-beaten
3/4 c. milk
1/3 c. vegetable oil
1 c. apple, peeled and finely chopped
1/2 c. chopped frozen cranberries
Recipe
In a large mixing bowl, stir together flour, sugar, baking powder, salt and cinnamon. When well mixed, make a well in the center of the dry ingredients.
In a separate bowl, blend together egg, milk, oil, apple and cranberries.
Add all at once to dry ingredients. Stir just until moistened. Fill paper-lined or greased muffin cups about 2/3 full. Bake at 400 degree oven for 15 to 20 minutes or until tops are lightly browned and toothpick inserted in center of muffins comes out clean.
Cool in tins for 10 minutes. Remove and continue cooling on wire rack.
