Banana Mocha Muffins

2-1/2 cups unsifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon instant coffee granules
1 tablespoon hot water
1-1/3 cups mashed fully ripe banana (about 3 bananas)
1 cup (2 sticks) butter or margarine, softened
1-1/4 cups sugar
1 egg
1 cup semisweet chocolate pieces
Recipe
Preheat the oven to hot (400 degrees). Grease 2-1/2 inch muffin-pan cups.
Stir together the flour, baking powder, baking soda and salt in a small bowl. Set aside.
Dissolve the instant coffee in the hot water. Stir in the banana and set aside.
Beat together the butter and the sugar until light and fluffy. Beat in the egg. Mix in the banana mixture. Stir in the flour mixture until well blended. Fold in the chocolate pieces. Spoon the batter into the prepared cups.
Bake in the preheated 400 degree oven for 25 to 30 minutes, or until a wooden pick inserted in the center of the muffins comes out clean. Remove the muffins from the cups to a wire rack to cool.
