GREAT MORNING MUFFINS
18 muffins
2 cups all-purpose flour
1-1/4 cups sugar
1 Tbsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. baking soda
1 cup (2 sticks) Shedd's Spread Country Crock Spreadable Sticks, melted
3 large eggs
2 tsp. vanilla extract
1 cup shredded carrots
1/2 cup raisins
1/2 cup chopped pecans or walnuts
1/2 cup flaked coconut
1 medium apple, peeled and grated
Preheat oven to 400°. Grease 18 muffin cups or line with paper cupcake liners; set aside.
Recipe
In large bowl, combine flour, sugar, baking powder, cinnamon and salt and baking soda. With wooden spoon, stir in eggs, Shedd's Spread Country Crock and vanilla just until combined. Stir in carrots, raisins, pecans, coconut and apple. Evenly spoon batter into prepared pans.
Bake 20 minutes or until toothpick inserted in center comes out clean. On wire rack, cool 10 minutes; remove from pans and cool completely.
