    Jumbo Cinnamon-Raisin Muffins

    2 cups whole grain pastry flour
    1/2 cup packed brown sugar
    2 teaspoons baking powder
    1 teaspoon ground cinnamon
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    3/4 cup raisins
    2 large egg whites
    1 cup low-fat plain or vanilla yogurt
    1 tablespoon maple syrup
    1 teaspoon vanilla extract

    Recipe

    Preheat the oven to 350 degrees. Coat a 6 cup jumbo muffin pan with
    cooking spray.

    In a medium bowl, combine the flour, sugar, baking powder, cinnamon,
    salt and baking soda. Stir in the raisins.

    In a small bowl, beat the egg whites lightly. Stir in the yogurt,
    maple syrup and vanilla extract. Stir into the flour mixture just
    until totally combined. Evenly divide the batter among the prepared
    cups.

    Bake for 35 minutes or until a wooden pick inserted into the center of
    a muffin comes out clean. Cool on a rack for 5 minutes. Remove the
    muffins from the pan, and cool completely
