Morning Muffins
6 tbs butter
1/2 cup sugar
1 egg
1/2 cup plus 2 tbsp milk
1/2 tsp vanilla
2 cups chopped fruit/nuts/chocolate chips/dried fruit
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
Recipe
Preheat oven to 350. Oil or line 12 muffin cups. Cream butter and sugar, beat in egg, milk, and vanilla. It should be lumpy. Fold in the fruit/nuts/chocolate chips. Mix in dry ingredients. Spoon batter into muffin cups and bake for 30-35 minutes. These taste great - you can even just add canned fruit cocktail and they turn out quite nicely.
