Pumpkin-Apple-Pecan Muffins

List of Ingredients

2 1/2 cups flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/2 cups pumpkin (canned)
1/2 cup vegetable oil
2 cups apples (chopped)
1 cup pecans (pieces)




Recipe

Combine first five ingredients in large bowl. In medium bowl combine egss, pumpkin and oil; then add to dry ingredients stirring until moistened. Stir in apples and pecans. Spoon into muffin pan (12 regular or 6 jumbo).
Bake at 350º for 35 to 40 minutes for regular muffins or 40 to 45 minutes for jumbo muffins.
