    Breakfast Egg Burrito Grande

    1 medium potatoes, diced (1 cup)
    1 medium green bell pepper, chopped (1 cup)
    1 small onion, chopped (1/4 cup)
    1/2 tsp. chili powder
    1 tsp. butter or margarine
    5 eggs, slightly beaten
    1 cup canned refried beans, heated
    1/2 cup shredded cheddar cheese (2 oz.)
    1 small tomato, seeded and chopped (1/2 cup)
    1/2 cup salsa
    8 flour tortillas (8-10" in diameter)

    Spray 10" skillet with cooking spray. Cook potato, bell pepper and onion in skillet over medium heat, stirring occasionally, until tender. Stir in
    chili powder. Remove from skillet; keep warm. Melt butter in same skillet over medium heat. Cook eggs in butter, stirring frequently, until set but still moist.

    For each burrito, spread about 2 tablespoons beans, 2 tablespoons potato mixture, 1 tablespoon cheese, 2 tablespoons eggs, 1 tablespoon tomato and 1 tablespoon salsa in center of each tortilla. Fold tortilla around filling. 4 servings.


    Hint: Warm the tortillas quickly in the microwave oven before filling.
