Hash Brown Breakfast Casserole

List of Ingredients
butter-flavored cooking spray
3 c frozen, shredded hash- brown potatoes
1 1/4 c cooked lean ham, finely chopped
1 c reduced-fat sharp cheddar cheese
1/3 c green pepper, diced
1 1/2 c frozen egg substitute, thawed
1 c skim milk
Recipe
Lightly spray a 9 x 13 inch baking dish with cooking spray.
Preheat oven to 425 degrees F. Thaw hash brown potatoes between
layers of paper towels. Press potatoes into bottom and sides of
prepared dish to form a crust. Generously spray potatoes with
cooking spray. Bake for 25 minutes or until lightly browned.
Remove from oven and cool on a wire rack for 10 minutes. Reduce
oven temperature to 350 degrees. While crust cools, combine ham
with cheese and green pepper. Gently spoon mixture into crust.
In a medium mixing bowl, combine egg substitute and milk. Stir
well and pour over ham and cheese. Bake at 350 degrees for 25
minutes or until set. Let stand for 10 minutes before slicing.
Makes 8 servings.
