    1 cup all-purpose flour
    1/4 cup sugar
    1 teaspoon baking powder
    1/4 teaspoon salt
    1/2 teaspoon groung cinnamon
    1/2 teaspoon ground nutmeg
    1 cup grated carrots
    1 cup milk
    1 teaspoon vanilla extract
    2 eggs, separated

    Recipe



    1. Preheat a lightly gresed skillet or griddle to 425 degrees F.
    2. In a large bowl, mix the grated carrot together with all of the dry ingredients. 3. In another bowl, whisk the two egg yolks, milk and vanilla together and add it to the flour mixture, stirring to combine.
    4. Just before ready to cook, beat the egg whites until stiff and fold them into the batter.
    5. Pour the batter onto the skillet, cook until bubbles appear on the suface of the cake, flip, and cook other side briefly, until golden in color.
    For a great breakfast, enjoy warm with honey or syrup drizzled over the top!
