Perfect Pancakes
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup buttermilk
3 tablespoons butter -- melted
1 egg
Recipe
In a deep, narrow bowl, mix dry ingredients. Add rest of ingredients, stirring only enough to mix (over-beating will lose air bubbles). Allow batter to rest 20-30 minutes (critical step). This is a very important step.
By tablespoons, put onto hot griddle and cook, turning once as they brown.
This makes 15 4" pancakes. You will probably want to double it. To substitute for buttermilk; put 2 tbs. of lemon juice in a cup measure and add enough milk to make 1 cup. Let stand a minute or two.
