Pumpkin Griddle Cakes
1 beaten egg
1 and 1/2 cups cooked pumpkin
1/3 cup finely chopped onion or 2 tbsp. dried onions
1/4 cup milk, if canned pumpkin is used, increase to 1/3 cup
3/4 cup all purpose flour
1/4 cup cornmeal
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. Cajun spices
Recipe
In a medium bowl beat the first 4 ingredients together. Mix all the dry ingredients with a whisk and add to the wet. Beat well. The mixture should have the thickness of whipped cream. Using a nonstick fry pan with very little oil, cook griddle cakes at lower temperature than you would pancakes as these have to cook through without burning. Serve as a side dish.
