Strawberry-Stuffed French Toast

6 oz (two-thirds of an 8-ounce package) lowfat Neufchâtel cheese, softened
1/2 cup maple syrup, divided
8 slices bread
18 oz baskets of California strawberries, stemmed and sliced, divided
2 pcs eggs
3 tbsp milk
1 tbsp butter or margarine
1 tbsp vegetable oil

1.With only eight ingredients, Strawberry-Stuffed French Toast is a
healthy, easy-to-prepare treat for kids heading off to school, as well
as an irresistible entrée for weekend brunches.
2.Lowfat Neufchâtel cheese brings a rich and decadent flavor to the
filling without adding the extra calories and fat.
3.Warm strawberry sauce made with thick maple syrup and fresh
strawberries tops this impressive crowd-pleaser.
4.In small bowl, using fork mix cheese and 2 tablespoons of the syrup
until blended.
5.Spread one side of each bread slice with cheese mixture, dividing
evenly.
6.Layer each of four slices with sliced strawberries to cover surface.
7.Close sandwiches with remaining four slices, facing cheese side
down.
8.Press together lightly.
9.In shallow dish, beat eggs and milk until blended.
10.In large nonstick skillet, heat butter and oil over medium heat until
hot.
11.Dip sandwiches into egg mixture, turning to soak both sides; place in
skillet.
12.Cook 5 to 6 minutes until browned, turning once.
13.Meanwhile, in small sauce pan, combine remaining 6 tablespoons of
syrup and remaining strawberries.
14.Heat over low heat just until warmed; remove from heat.
15.Sift powdered sugar, if desired, over French toast; cut each
diagonally in half.
16.Serve immediately with warm strawberry mixture.
