    Scrambled Eggs in a Hole

    Margarine or butter, softened
    4 slices bread
    1 t. margarine or butter
    2 wieners (hot dogs), cut into 1/2-inch pieces
    4 eggs, beaten
    1 Tbsp. milk


    Recipe



    Spread margarine/butter on both sides of bread.

    Using 3-inch cookie cutter, cut ut center of each bread slice.

    In large sillet over mediumheat, toast 2 bread slices, including cut-out pieces, turning once. Remove to serving dishes. Repeat with remaining bread slices.

    In same skillet, melt th 1 teaspoon margarine/butter; saute wieners for 2 to 3 minutes or until browned.

    In medium bowl, combine eggs and milk; mix well. Pour over wieners. Reduce heat to low; cook until eggs are set but still moist, stirring occasionally from outside edge to center of pan.

    Spoon 1/4 of the scrambled egg mixture into center of each toasted bread slice. Top with toasted cut-outs. Serve immediately.

    Makes 4 servings.
