    Apple Juice Cake

    ½ cup shortening
    ½ teaspoon vanilla
    1cup sugar
    2 eggs
    2 cups sifted cake flour
    1 teaspoon baking powder
    ½ teaspoon soda
    ½ teaspoon salt
    ½ teaspoon cinnamon
    ¼ teaspoon cloves teaspoon
    ½ nutmeg cup
    ¾ apple juice

    Recipe



    Cream fat, vanilla and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together flour, baking powder, soda, salt and spices. Add to creamed mixture in three portions alternately with apple juice. Turn batter into 2 greased 8-inch round layer pans. Bake at 375° F. 25 to 30 minutes.
    FLUFFY APPLE JUICE FROSTING: Mix 1 cup sugar, ½ cup apple juice, pinch salt and 1 tablespoon lemon juice. Cook until syrup forms a soft ball when dropped into cold water. Pour very slowly over 3 stiffly beaten egg whites, beating constantly. Continue beating until mixture stands in soft peaks. Spread between layers and over top and sides of cake.
