    Banana Chiffon Cake

    BANANA CHIFFON CAKE

    2¼ cups cake flour
    1½ cups sugar
    3 tsps. baking powder
    1 tsp. salt
    ½ cup cooking oil
    5 unbeaten egg yolks
    3 tbsps. cold water
    1 cup mashed ripe banana
    1 tsp. grated lemon peel
    8 egg whites
    ½ tsp. cream of tartar
    1 cup whipping cream
    2 tsps. sugar
    1 banana
    some lemon juice


    Recipe

    Mix flour, sugar, baking powder and salt. Make a well in the center. Add oil, egg yolks. water, mashed banana and lemon rind. Beat till smooth. Beat egg whites and cream of tartar till very stiff peaks form. Pour batter over the egg whites. Fold all together very gently. Bake in air ungreased, 10" tube pan at 325° for about 55 minutes. Invert and cool. Whip cream with remaining sugar (2 tsps.) till soft peaks form. Frost cake. Slice banana and dip in lemon juice and decorate over frosting.
