    Brazilian Coffee Banana Cake

    Recipe Introduction

    A juicy, rather "heavy" cake with a very interesting taste of banana, coffeeand spices. It keeps very well and can therefore be made several days inadvance.

    List of Ingredients

    Makes 1 cake

    150 g (5 oz) butter or margarine

    3 dl (1 1/4 cups) sugar

    2 eggs

    5 dl (2 cups) flour

    2 tsp baking powder

    1 tsp bicarbonate of soda

    1 tsp ground ginger

    2 tsp ground cinnamon

    5 middle-size bananas

    1/2 dl (scant 1/4 cup) strong coffee

    Icing:

    2 dl (good 3/4 cup) powdered sugar

    2 tbs strong coffee

    2 tbs flaked coconut


    Recipe

    Heat the oven to 200C/400F. Grease and flour a baking dish, capacity 1 1/2

    liters / 6 cups.

    Stir fat and sugar fluffy and add the eggs, one by one. Mix flour, baking

    powder, bicarbonate of soda and spices and stir this into the batter,

    alternating with mashed bananas and coffee. Pour the batter in the dish and bake on the lowest shelf for about 50 minutes. Allow the cake to cool

    slightly in the dish before unmolding.

    Stir powdered sugar with coffee to a smooth mixture and spread the icing

    over the cake while still slightly warm. Sprinkle with flaked coconut.
