    Bacardi Pina Colada Pudding Cake

    1/3 cup Bacardi dark rum
    1 small box vanilla or coconut cream instant pudding mix
    1/4 cup vegetable oil
    1 box white cake mix (18.25 oz)
    4 eggs
    1/2 cup water
    1 to 2 cups flaked coconut (amount depends on flavor of pudding)

    Recipe



    Blend all ingredients except coconut in a bowl. Beat 4 minutes at
    medium speed. Pour into 9x13 pan. Bake at 350 for 30-35 minutes.
    Do not underbake. Cool before frosting. Frost with favorite
    frosting and sprinkle with coconut.

    Notes: With vanilla pudding, increase water to 3/4 cup and add 1 cup
    coconut to batter.
