    This simple-to-make cake made with fresh ingredients brings to mind all the wonderful aromas and memories of a wonderful day in the country. Always a welcome addition to any meal, just cover the cake in its attractive baking dish, with the vented cover, and take along to a friend's home, potluck dinner or picnic. We love to serve it on the porch with afternoon tea!

    Country Berry Cake


    Prep Time: 10 minutes Cook Time: 40 to 45 minutes Total Time: 50 minutes
    Serves: 8

    Ingredients:
    ½ cup butter (1 stick) cut into 1-inch pieces
    1 cup plus 1 tablespoon sugar
    2 ½ cups self rising flour
    ½ teaspoon ground nutmeg
    3 eggs
    1 cup fresh or frozen unsweetened raspberries, blackberries or blueberries
    Cooking and baking spray
    1 tablespoon confectioners’ sugar

    Position oven shelf in center of oven and preheat to 350° F.

    In a large bowl, place butter and 1 cup sugar. With an electric mixer, beat on low to blend. Then beat on high speed until well mixed, about 3 minutes.

    Add the self rising flour, ground nutmeg, and eggs. Mix on low to blend, and then beat on high speed until well blended, about 2 minutes.

    Spray the inside of 8" Square Baking Dish evenly with cooking and baking spray. Spoon batter evenly into dish and, with a rubber spatula, smooth top.

    Sprinkle berries and remaining 1 tablespoon of sugar evenly over the batter. Bake for 40 to 45 minutes, until browned and a toothpick inserted near the center comes out clean. Cool in pan.

    Before serving, dust the top of cake with confectioners’ sugar. Cut into squares and serve from pan. Cake keeps well refrigerated for several days.
