    Fresh Baked Peach Pie

    FRESH BAKED PEACH PIE

    ¾ cup sugar
    ¼ cup firmly packed brown sugar
    5 cups freshly sliced peaches
    ¼ cup cornstarch
    1/8 tsp. salt
    1 cup water
    2 tbsps. butter
    ½ tsp. almond extract


    Recipe

    Combine sugar and brown sugar. Sprinkle over peaches. Let stand for 1 hour. Drain and reserve juice. Combine cornstarch and salt in saucepan. Gradually add reserved peach juice and water. Blend till smooth. Cool over medium heat,stirring constantly till thick. Remove from heat. Stir in butter and almond extract. Fold in peaches, coating well. Pour into a 2 crust pie shell. Put top crust on. Sprinkle with 1 tbsp. sugar and 1/8 tsp. cinnamon. Bake at 450° for 10 minutes, reduce heat to 350° and bake for 30-35 minutes.
