Fresh Apple Cake

1 cup vegetable oil
2 large eggs
2 cups sugar
2 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1 cup chopped pecans
6 oz. butterscotch chips
3 cups apples, finley chopped (Granny Smith)
powdered sugar for garnish
In bowl mix oil, sugar and eggs well. In another bowl, sift together dry ingredients. Add liquid mixture to dry. Then stir in pecans and apples. Mix well. Pour mixture in well coated bunt pan. Then sprinkle the butterscotch chips on top. Bake at 350 degrees for one hour or until toothpick comes out clean. Let cool and dust with powdered sugar.
