    LIME PIE

    6 eggs
    1/2 cup limejuice
    1/2 cup sugar
    1 can condensed milk
    1 cup freshly grated coconut
    1 lightly browned pie shell


    Recipe

    Beat two whole eggs and the yolks of 4 eggs. Reserve the whites of four
    eggs for the meringue. Add the condensed milk to the egg yolks and mix well. Add
    the limejuice, mix and fold in the fresh coconut. Pour into pie shell and
    bake for five minutes at 200C. Beat the egg whites until foamy. Add the sugar
    gradually and continue beating until the whites are stiff. Remove pie from
    oven and cover with meringue. Bake four to five minutes until meringue is golden
    brown.
