    Magic Mincemeat Fruitcake

    This easy fruitcake also is called Ever-So-Easy Fruitcake and Holiday Fruitcake.


    List of Ingredients




    2 1/2 cups unsifted all-purpose flour

    1 teaspoon baking soda

    2 eggs, slightly beaten

    1 (29-ounce) jar ready-to use mincemeat

    1 (14-ounce) can sweetened condensed milk

    2 cups (1 pound) mixed candied fruit

    1 cup coarsely chopped nuts

    Recipe



    Preheat oven to 300 degrees. Grease and flour a 10-inch fluted tube pan. Combine flour and soda; set aside. In large bowl, combine eggs, mincemeat, sweetened condensed milk, candied fruit and nuts. Blend in flour mixture. Pour batter into prepared pan. Bake 1 hour and 45 minutes or until cake tests done. Cool 15 minutes. Turn cake out of pan. Garnish as desired.

    Note: To substitute condensed mincemeat for ready-to-use, crumble 2 (9-ounce) packages condensed mincemeat into a small saucepan; add 1 1/2 cups water. Boil briskly 1 minute. Cool and proceed as directed.

    For Fruitcake-in-a-Can: Grease 3 (1-pound) coffee cans; fill each with 2 2/3 cups batter. Bake 1 hour and 20 minutes until cakes test done.
