    2 1/2 oz whipping cream
    1 oz butter
    1 1/2 oz dark chocolate
    1/2 oz water

    Molten Cakes


    1/2 oz butter
    2 eggs, yolks
    3 oz dark chocolate
    1 oz ground almond
    1/2 oz flour
    1 oz cornstarch
    2 eggs, whites
    1 1/4 oz sugar

    Directions:


    Ganache

    To make the ganache, bring the cream and water to a boil. Add the chopped chocolate and butter and stir to combine. Remove from heat and place in fridge to cool and firm up.


    Molten Cakes

    For the cakes, mix the egg yolks and butter together until light and creamy. Add the chocolate and dry ingredients and stir to combine.


    In a separate bowl whip the egg whites until foamy. Add the sugar and continue to whip until they form soft peaks. Fold the whites into the chocolate batter.


    Prepare 4 eight ounce ramekins by lightly buttering and flouring. Fill each 1/3 full and place 2 melon balls of the ganache in the centre. Cover with the remaining batter to fill the dishes 2/3 full. At this point the cakes can be refrigerated until ready to bake and serve.


    To bake, place in a preheated 325 degrees Fahrenheit oven for about 15 minutes or until the tops have risen and cracked, the inside should be melted. Serve immediately with whipped cream or ice cream.
