Old Fashioned Southern Applesauce Cake

Recipe Introduction
My Mom ALWAYS made southern applesauce cake and old-fashioned boiled custard for Christmas. She "soaked" the cake with a little blackberry wine that she made during the summer just for this purpose. By "soaking", she covered the cake that had been placed in a cake tin with a piece of cheesecloth and dampened it daily with blackberry wine so the cake would pick up the flavor of the wine. It is one of the best desserts I have ever eaten in my life. My Mom was a wonderful southern cook. I tried many times to duplicate it and this year finally made it. Here is the recipe.
List of Ingredients
Southern Applesauce Cake
1 cup sugar
2 eggs
1/2 tsp cloves, powder
2/3 cup yellow raisins
1/2 tsp ginger
1/4 cup butter
3 Tblsp. oil
1 tsp cinnamon
1 tsp baking soda
1/2 tsp nutmeg
2 cups flour
2 cups chunky applesauce
1 cup chopped black walnuts
1 small container of candied red cherries, halved
1 small container of green candied green cherries, halved
Recipe
Cream sugar and butter. Add spices and eggs. Add applesauce and oil.
Combine nuts, raisins and candied cherries with one cup of flour. Stir to completely coat otherwise fruit and nuts will sink to bottom when cake bakes. When coated add to mixture.
Add remaining flour. Bake at 325o in a tube pan for 1 to 1 1/2 hours or until done.
