    The cornmeal gives this a dense, crunchy texture. Serve with fresh fruit and whipped cream.


    List of Ingredients




    Orange Cornmeal Cake

    1 cup cornmeal
    3/4 cup all-purpose flour
    1 teaspoon baking powder
    Pinch of salt
    2 eggs
    1 egg yolk
    1 tablespoon orange juice
    2 teaspoons grated orange rind
    1/2 teaspoon vanilla extract
    1/2 cup butter, softened
    1 cup granulated sugar

    Recipe



    Preheat oven to 350 degrees F. Butter and flour an 8-inch cake pan.

    Combine cornmeal, flour, baking powder and salt in a bowl. In a separate bowl, stir together eggs, egg yolk, orange juice, rind and vanilla extract.

    Cream together butter and sugar with an electric mixer until fluffy. Beat in egg mixture, then flour mixture. Continue to beat until batter is pale yellow, about 3 minutes. Pour batter into pan and bake for 40 minutes or until a wooden pick comes out clean. Cool on wire rack for 10 minutes. Turn onto plate. Make holes with a wooden pick and brush with syrup. As syrup is absorbed, brush with more.

    Syrup: Combine 1/2 cup granulated sugar and 1/2 cup water in a small pot. Slowly heat together until sugar is dissolved, then bring to boil. Boil for 5 to 6 minutes or until mixture forms a syrup. Cool 2 minutes before adding 1/2 cup orange juice.

    Makes 6 to 8 servings.
