    Peanut Butter and Jelly Cake

    1 package yellow cake mix 2-layer size

    1 cup water divided

    2 eggs, unbeaten

    2/3 cup creamy peanut butter

    Grape jelly for filling

    Cream Cheese Frosting

    1 3-ounce package cream cheese, softened

    1/4 cup butter, softened (1/2 stick)

    1 teaspoon vanilla extract

    2 cups sifted confectioners sugar

    Favorite white frosting or cream cheese frosting (recipe below)


    Recipe

    Empty cake mix into a large bowl. Add 1/2 cup water, blend then beat 2 minutes at medium speed with

    electric mixer. Add eggs, blend then beat 1 minute. Add peanut butter; add remaining 1/2 cup water

    gradually; beat for 1 minute at low speed.

    Pour into 2 9-inch round layer pans that have been greased and floured. Bake at 350 degrees for 25

    minutes, or until cake tests done. Cool for 10 minutes; remove from pans to wire rack to cool completely.

    Spread grape jelly between layers and frost with your favorite white frosting or cream cheese frosting

    CREAM CHEESE FROSTING


    Beat together the cream cheese, butter and vanilla. Add sugar and beat until smooth. Spread on cake.
