Pina Colada Cake
1- 2 layer size white cake mix, without pudding
4 eggs
1/4 cup water
1-4 serving size instant coconut cream pudding mix
1/3 cup dark rum
1/4 cup oil
1 cup flaked coconut
Pina Colada Frosting
Pina Colada Frosting.
1- 8 ounce can crushed pineapple,undrained
1-4 serving size instant coconut cream pudding mix
1/3 cup rum
1-9 ounce container frozen whipped topping, thawed
Coconut, optional
Recipe
Place cake mix in a large bowl. Add eggs, water, pudding mix, rum
and oil; beat on medium speed for
4 minutes. Fold in coconut. Pour batter into 2 greased and floured 9
inch cake pans. Bake at 350 degrees
for 25 to 30 minutes. Cool in pans for 15 minutes before turning out
on racks to cool. Spread with Pina
Colada Frosting.
Pina Colada Frosting.
Combine pineapple with pudding mix and rum. Fold in thawed topping.
Spread between cake layers and on top. Sprinkle with coconut, if
desired.
