Pineapple Upside Down Cake

3 tablespoons butter
1 1/3 cups dark brown sugar
14-ounce can sliced pineapple in syrup
6 maraschino cherries
3 eggs
1/2 cup pineapple juice
1 1/2 cups granulated sugar
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
Recipe
preheat oven to 350 degrees. melt butter in 12-inch iron skillet. spread brown sugar on butter. add well-drained pineapple slices and cherries. reserve pineapple syrup. in separate bowl, beat eggs until fluffy . add pineapple syrup and juice beating thoroughly. add sugar gradually while beating constantly. sift flour, baking powder and salt. add to mixture. add vanilla. pour batter over pineapple slices in cake pan bake 45 minutes in 350 degree oven. let cool 10 to 15 minutes and then turn out onto serving dish.
