Pumpkin Chocolate Chip Pound Cake

* 1 c. Wesson oil or melted butter or melted margarine
* 4 eggs
* 2 c. cooked mashed pumpkin or canned
* 1 t. vanilla
* 2 c. sugar
* 1 tsp. salt
* 2 tsp. cinnamon
* 2 c. plain flour (pre-sifted)
* 2 tsp. soda
* 2 c. chocolate chips (milk or semi-sweet)
* 1 c. nuts
* 1/4 c. butter (melted)
* 2 c. powdered sugar
* 1/4 t. salt
* 2-4 T. milk, evaporated milk or heavy cream
* 1/2 t. any flavor of your choice (vanilla, orange or almond extract)
In a large mixing bowl, mix the first 4 ingredients with a wire whisk. Add the rest of the ingredients in order listed and stir with a rubber spatula until well mixed. Stir in chips and nuts. Line the bottom of an angel food pan with waxed paper or grease and flour the pan. Pour into cake pan. Bake at 350° for 1.5 hours or until a toothpick comes out clean. Cool and serve.
You can frost the cakes with a thin vanilla frosting.
